Chocolate Chip Banana Bread (or Muffins)

  • 1 c sugar
  • 1/2 c shortening
  • 2 eggs, beaten
  • 3 bananas, mashed with 1 tsp each baking soda and baking powder
  • 1 c. white flour
  • 3/4 c whole wheat flour
  • 1 tbsp wheat germ and/or flax seed (optional)
  • 1/4 tsp salt
  • chocolate chips – two handfuls if your hands are small, one if your hands are large

Cream shortening and sugar.  Add beaten eggs, then mashed banana mixture.  Add flours, salt, wheat germ and flax.  Mix only to moisten; do not overmix.  Add chocolate chips, being sure to eat any that have fallen through your fingers.

Place in greased loaf pan or muffin cups.  Bake loaf at 350 degrees for about an hour; muffins at 375 degrees for 18 minutes.

* Note:  This works as an excellent truth serum for teenagers; particularly if it is fresh from the oven when they arrive home from school or work.
